Choc Coconut Cookies

These healthy Choc Coconut Cookies are brought to you by Sarah Cooper, aka Scoop It Up on Instagram. Sarah is a healthy foodie studying nutrition and Pilates instructor, based in Sydney. 

We can’t go past a good cookie (obviously) and here Sarah uses healthier ingredient alternatives than your average homemade choc chip cookie recipe. Sugar spikes be gone!

Makes: 8-10 depending on preferred size
Products used:  Peanut Nutter Nut Butter
Dietaries: gluten-free, dairy-free
Sugar:  2.5-3 g per cookie depending on size

Ingredients

  • 1 cup almond meal
  • 1/2 cup vanilla protein
  • 2 tbsp Peanut Nutter Nut Butter
  • 1 tbsp maple syrup
  • 1/2 cup dark choc chunks
  • 1/4 cup cacao nibs
  • 1/4 cup coconut flakes
  • 1 tsp baking powder
  • A good sprinkle of rock salt

What to do

  1. Combine all together & mould into balls
  2. Line a baking tray and flatten balls onto the baking tray
  3. Bake at 180 degrees for 12-15 mins, or until golden
  4. Allow to cool and then serve
