Isobel Stewart’s Nut Butter Bliss Balls

With two little ones and her successful coaching business, Isobel prioritises meal prep and has shared this super simple recipe with us, using all three of our delish nut butters.

Ingredients

  • 1/2 cup almond meal oats
  • 1/2 cup shredded coconut + extra for rolling
  • 1/2 cup crunchy peanut butter
  • 1/2 cup your choice of oat cluster
  • 1/2 cup pitted Medjool dates, packed
  • 1 heaped tbsp of each nut butter - Berry Bombshell, Peanut Nutter & Choc Chic

What to do

  1. Soak dates in boiling water for 10 minutes

  2. Drain and set aside

  3. Place shredded coconut, peanut butter, almond meal, oat clusters and dates into a food processor.

  4. Pulse until the texture of coarse sand, with no large pieces of date visible. (You can use a stick blender as an alternative)

  5. Add extra almond meal if dough is too moist.

  6. Divide batch into 3 and add a different flavour of nut butter to each  - Berry Bombshell, Peanut Nutter & Choc Chic

  7. Scoop out dough and use your hands to squeeze it together, shaping into approximately 5-6 balls per batch. Roll each ball into extra shredded coconut, until covered. Place in an airtight container and refrigerate until firm.
